How It Started

With the release of the Food and Agriculture Organization of the United Nations’ report, “Edible Insects”, it became clear that insects are a viable solution to feeding our growing population.

The Challenge

After learning of the exciting potential of insect, it was off to Thailand to meet seasoned farmers and dine in Thailand’s finest insect cuisine. As we did, we saw big potential in the edible insect industry for the growth and innovation.

So we collaborated with professors and students from Khon Kaen University in Thailand to help local farmers produce insects in a sustainable and scalable way.

Crickets in the Kitchen

As we were exposed to this new food source, we started getting creative in the kitchen to develop healthy and delicious ways insects could be introduced to the West.

We discovered that if insects were milled into a flour, we could incorporate them into a variety foods like protein bars, pizzas, chips, cookies and more!
